Ingredients

  • 2 1/4 tsp. active dry yeast
  • 1 tsp. Sugar
  • 5 cups all purpose flour
  • 1 Tbsp. Kosher salt
  • 6 Tbsp. Extra virgin olive oil 
  • Flaky sea salt
  • Black olives
  • Artichoke hearts
  • Jalapeño
  • Fresh herbs
  • Prime Roots plant based pate
  • Prime Roots koji salami
  • Plant based cheese

Instructions

  1. Whisk together 2 cups lukewarm water with the yeast and sugar. Let sit for 5 minutes, it should get foamy.
  2. Add flour and salt, mix together until you form a shaggy dough.
  3. Pour 4 Tbsp EVOO into a big bowl and transfer the dough, turn to coat in oil. Fold the dough over on itself 4 times and cover with plastic wrap. Refrigerate for at least 8 hours or up to 48 hours until doubled in size.
  4. Prepare a sheet pan with 1 Tbsp oil and a few strips of parchment paper to prevent sticking. Scatter aluminum foil cups, olives, herbs, flaky salt and toppings and stretch the dough over the 18x13” rimmed baking sheet. Drizzle the remaining 1 Tbsp EVOO and dimple the focaccia all over with your fingers.
  5. Allow the dough to proof for 3-4 hours. Preheat oven to 450°F and bake for 15 minutes. Flip over the dough and remove the aluminum cups. Bake for an additional 15 minutes.
  6. Allow the dough to cool and fill the indents with Prime Roots pate, salami and plant based cheeses.
